    Makes: 10–12 cookies

    Ingredients

    Vanilla Dough

    * 170g unsalted butter, softened
    * 100g caster sugar
    * 1 large egg
    * 1 tsp vanilla extract
    * 280g plain flour
    * ½ tsp baking powder
    * Pinch of salt

    Chocolate Dough

    * About one-third of the vanilla dough
    * 12g unsweetened cocoa powder
    * 1 tsp milk (if needed)

    Method

    1. Preheat the oven to 170°C fan-forced (190°C conventional) and line a baking tray with baking paper.
    2. In a large bowl, cream the softened butter and sugar until light and fluffy.
    3. Beat in the egg and vanilla extract until well combined.
    4. In a separate bowl, whisk together the flour, baking powder and salt. Gradually add the dry ingredients to the butter mixture and mix until a soft dough forms.
    5. Divide about one-third of the dough into a separate bowl. Add the cocoa powder and knead until evenly combined. If the chocolate dough feels a little dry, knead in 1 teaspoon of milk.
    6. Wrap both doughs and refrigerate for 20–30 minutes.
    7. Divide both doughs into small equal pieces and roll each piece into a small ball, about 1–1½ cm in diameter.
    8. Arrange the dough balls close together to create a soccer ball pattern, alternating the vanilla and chocolate dough. Continue building the pattern until it is slightly larger than your round cookie cutter.
    9. Place a sheet of baking paper over the dough and gently flatten it with the bottom of a flat glass, small plate or measuring cup until the dough is about 8–10 mm thick.
    10. Refrigerate the flattened dough for 10–15 minutes until firm.
    11. Using a round cookie cutter, cut out the cookies and carefully place them onto the prepared baking tray, leaving a little space between each one.
    12. Bake for 10–12 minutes, or until the edges are just beginning to turn lightly golden.
    13. Allow the cookies to cool on the baking tray for 5 minutes, then transfer them to a wire rack to cool completely.
